Rýžové víno - Saké
Název saké se v Japonsku používá pro několik různých druhů nápojů. Záleží především na regionu. Saké může označovat destiláty vyráběné z brambor, z cukrové třtiny a podobně. Nejznámější nápoj s názvem saké je víno vyráběné pivovarnickým způsobem, tedy vařením, z dlouhozrnné rýže. „Neasijsky“ hovořící národy pod názvem saké prakticky nic jiného než rýžové víno neznají, tedy kromě různých ochucených variant. Toto saké je dost unikátním a tradičním druhem alkoholu podobně jako naše slivovice, pivo nebo středomořská rakie.
Ingredience:
7 litrů vody
3 kilogramy cukru krystal (lze použít také cukr třtinový)
1 kilogram rýže
140 gramů droždí
2 vanilkové cukry
2 citróny
1/2 lžičky muškátového květu
1 lžičku anýzu
1/2 lžičky zázvoru
kousek celé skořice
30 kusů hřebíčků
10 kusů nového koření
Postup:
Nejprve převaříme vodu do které přidáme cukr. Do vychladlé vody s cukrem nadrobíme droždí a přidáme rýži, vanilkový cukr, muškátový květ, anýz, zázvor, skořici, hřebíček, nové koření a citróny (kůru můžete nastrouhat, dužinu citrónu nakrájet na kostky).
Saké necháme 7 týdnů kvasit v 10 litrovém demižonu (demižon je vhodné utěsnit vatou či kouskem látky s gumičkou). Saké po 7 týdnech stočíme do lahví a necháme ještě dalších 14 dní uležet na tmavším a chladnějším místě.
Nejsou z toho ty kasnice pak cítit? Ovocná vína jsem dělala s vinnýma kvasinkama z drogérie, tohle jsem chtěla zkusit taky s tím.
určitě nejsou. Má to hodně ovocný nádech (i když nevím vodkaď 🙂 )
