Tady je jeden recept od kamaráda, který leží dlouho v zapomnění:
Vyrobit si vlastní víno není nic složitého, nenechte se zaskočit délkou návodu. Víno lze připravit téměř z veškeré zeleniny a ovoce, pouze je nutné podle tabulek dodat cukr a vodu. Je to jednoduchý způsob jak konzervovat ovoce, příjemnější než výroba kompotů. Nehrozí téměř žádné nebezpečí otravy (vyjma otravy alkoholem) Chce to jen čas, asi tak 2–3 měsíce, nejlépe půl roku. Pouze si budete muset zvyknout na specifickou chuť a vyšší obsah alkoholu až 16%. Pokud bude víno zakalené není to na závadu.
Potřeby: Nejdůležitější a nejnáročnější je sehnat demižon. Mnoho lidí ho má doma a nepoužívá ho. Projděte se po půdě (sklepě) vašich prarodičů a nejspíš na nějaký narazíte, raději neopletený. Vůbec se neostýchejte ho vyvlastnit, určitě ho potřebujete víc než oni. Nejspíše vám ho rádi dají. Kupovat ho nemá smysl, 5-ti litrový stojí 208kč, 25-ti litrový 300kč, 50-ti litrový 780kč. Asi nejpříjemnější způsob bude zakoupit v delvitě 5-ti litrový i s vínem za 150kč! Nejlepší jsou desetilitrové, snadno se s nimi manipuluje. Chtěl bych vás vidět jak ústům zvedáte padesátilitrovou láhev (tzv. alkoholokaust) Skoro v každé větší drogerii seženete směsnou kulturu kvasinek Vínka (prostě vinné kvasinky – 6kč dají vám k nim i stručný návod k použití). Nejspíše vám dají i živnou sůl – 7kč, ta ale není bezpodmínečně nutná. Balení živné soli i kvasinek vystačí na deset litrů vína.
Dále budete potřebovat kvasnou zátku. Kvasná rourka bez špuntu stojí asi 30kč, můžete použít i kvasný klobouček Vínka. Kvasnou rourku zasaďte do korkové zátky která pasuje do vašeho demižonu. Dírku v ní budete asi muset vyvrtat. Velký pozor při cpaní trubičky do zátky! Když trubičku rozbijete asi si u toho i pořežete ruce!
Kvasná zátka zabraňuje přístupu kyslíku do lahve a zároveň umožňuje probublávání CO2 ven. V případě přístupu kyslíku by mohl vzniknout ocet. V kvasné zátce musí být nalito trochu vody-musí to přes ní probublávat. Můžete použít i hadičku jednou stranou zasazenou v korkovém špuntu a druhou stranou ponořenou ve zkumavce s vodou.
V Jihlavě se dají kvasinky, živná sůl, kvasná rourka i korkové zátky sehnat v drogerii U Lva (mezi Beneškou a Matky boží)
K samotnému procesu výroby se nebudu snažit napsat nic svého. Držte se oficiálního návodu výrobce kvasinek.
Návod k použití kvasinek VÍNKA
Obsah 1 sáčku kvasinek VÍNKA stačí na prokvašení 10 litrů.
Suché kvasinky VÍNKA se před vlastním zakvašením vína nechají ozmnožit takto: Obsah balíčku se vsype do čisté (vypařené) lahvičky o obsahu 150 ml, která se naplní do 3/4 převařenou ovocnou šťávou asi 25°C teplou (lze použít také jablečný mošt). Lahvička se uzavře vatou a nechá stát po dobu 72 hodin při teplotě kolem 25°C. Takto rozmnoženými kvasinkami se zakvasí ovocná šťáva.
Postup při přípravě vína
1. Dobře vyčištěná, horkou vodou vymytá kvasná nádoba o obsahu 10 l se naplní do 9/10 ovocnou šťávou, upravenou cukrem a vodou podle tabulky. Nedoporučuje se láhev plnit více, aby šťáva při bouřlivém kvašení nevytekla. Do šťávy se dokonale spláchnou rozmnožené kvasinky, připravené podle návodu a l sáček živné soli VÍNKA a uloží se do místnosti, ve které je asi 20 až 25°C.
2. Při přípravě vína z ovoce, které se nelisuje (celé plody), např. šípky, trnky, dále z povidel a chlebových kůrek se doporučuje použít dvojnásobného množství kvasinek, tj. 2 sáčky na 10 litrů vína.
3. Při přípravě vína ze sušeného ovoce se doporučuje ovoce svařit s vodou a cukrem
4. Po bouřlivém kvašení se doplní kvasná nádoba svařenou ochlazenou vodou a víno se ponechá dokvasit.
5. Po ukončení kvašení , obvykle za 3 – 6 týdnů se víno stočí z usedlých kalů gumovou vyvařenou hadičkou do čisté, nejlépe vyvařené nádoby tak, aby se kvasničný sediment nezvířil. Nádoba naplněná vínem až po hrdlo se uzavře buď opět kvasnou nebo čistou zátkou korkovou a nechá se asi 2 měsíce stát. Po této době se provede druhé stáčení vína z kalů a to již přímo do lahví. U běžných druhů ovoce se nevylučuje použití kvasinek bez přídavků živné soli.
Předpis na 10 litrů vína
Tolik oficiální předpis. Pár mých osobních zkušeností:
Na začátku demižon naplňte jen z 8–9/10. Kdyby byl plný mohla by šťáva vypěnit. Po ukončení bouřlivého kvašení (3–6 dní) ho doplňte vychladlou převařenou vodou, nebo šťávou.
Není kam spěchat. Kvasinky je opravdu nutné nechat předem rozmnožit, potom vystačí i na větší objem vína. Kdo má přístup k chemikáliím může místo prodávané živné soli použít na špičku nože fosforečnanu amonného. Pozor aby kvasinky nepřišly do styku s vřelou vodou, nemuseli by to přežít.
Na rozmnožení kvasinek stačí použít oslazenou vodu.
Demižon musí být důkladně opláchnut od mycích prostředků, mohou brzdit či dokonce zastavit kvasný proces. Když se rozhodnete k výrobě použít kupovanou šťávu zkontrolujte jestli neobsahuje konzervanty.
CO2 začne přes kvasnou zátku probublávat až za 12–48 hodin, v závislosti na objemu demižonu. Pokud probublávat nezačne asi uniká jinudy.
Někdo doporučuje kvasit jen při teplotách 15–20˚C prý je větší výtěžnost alkoholu a aromatických látek. To je asi nutné vyzkoušet.
